Whole Grain Spelt Chop-n-mix Mediterranean Vibe Salad

Ingredients

You will need 80-100 grams grain (cooked weight) per person, and about 300 grams of veg if you really are going for it. And if you are going anyway then why wouldn’t you go all the way?! 😄

So long as you’ve got a the dressing right those different texture from the grains, nuts, veg, etc. are bound to produce a tasty result with lots of flavour. Key is here is taste, adjust, repeat until it zings. 

Spelt (from Hodmedods -- support local!)

Celery

Cherry tomatoes 

Red onions flash pickled in vinegar, sugar and salt (try this -- it works wonders!)

Avocado

Olives

Broad beans (frozen green peas or edamame work too)

Walnuts

Organic feta

Parsley

Chilli flakes

Boiled egg (6 minutes)

Whole grain mustard

Good olive oil

Method

  1. Finely dice the red onion, transfer to a small bowl, add a good splash of vinegar, a couple of pinches of salt, and a bit of sugar. Stir well with a spoon.

  2. Boil some water to regenerate grains from your freezer. If you haven’t yet started pre-cooking and freezing whole grains, we warmly recommend doing so. Otherwise cooked whatever grains you want to use, or grab a pouch of the pre-cooked stuff.  

  3. Chop the rest of the veg, olives, walnuts and parsley. 

  4. Add everything incl. the marinated onions to suitably sized bowl followed by a good spoonful or two (depends on the portion size) of mustard, and a drizzle of olive oil. Combine well. Crumble in the feta and gently fold through. 

  5. Taste and adjust seasoning.
