Broccoli, Pan-roasted Red Onion and Apple Slaw with Tahini Citrus and Ginger Dressing

This recipe is a fabulous vegetable element to go with the Chickpea Tikka. Tahini is a great way to create plant-based creamy dressings, and this one you definitely want to have in your repertoire.

Ingredients for two

  • 1/2 a 1 head of broccoli

  • 1 red onion

  • 1 apple

  • A small handful of goji berries or cranberries

  • A small handful of chopped walnuts

  • 3-4 tbsp tahini

  • Juice of 1/2 orange

  • Juice of 1/2 lime

  • A small knob of ginger

  • Water to thin

  • Olive oil

  • Sea salt

Method

  • Slice the red onion into thin wedges and put into a pan with a drizzle of olive oil and a sprinkle of sea salt

  • Slice the broccoli thinly with a box grater, knife or mandolin. Add to a bowl, season lightly and give it a gently massage.

  • Mix the tahini with the citrus juices and grated ginger. Mix well. It will go lumpy. That’s fine. Now add water until it’s got a nice creamy texture. Season. 

  • Slice the apples.

  • Chop the walnuts.

  • Add everything to the bowl with the broccoli including onions, dried berries and walnuts. Mix well. Taste and adjust seasoning. 

Serve with the Chickpea Tikka and steamed rice.
