Chickpea Tikka with Pan Roasted Cauliflower, Kale and Coriander & Lime Yoghurt
This was a quick meal that I improvised on an average Wednesday following the ‘eat like a bear’ healthy eating formula.
PULSE: Split Pea Tikka Masala
GRAIN: Naan bread (to make it super healthy, it could’ve been whole grain rice or quinoa in combo or instead of naan)
VEGGIES: Cauliflower and Kale (use whatever veggies you have around)
SEEDS/NUTS: Toasted cashews
The sauce was lime juice, coriander, Greek yoghurt, sea salt and agave sirup. Fresh green chilli would’ve worked well here. Just chuck it all into a blender and blend it. Or use a stick blender or Nutri Bullet.
